A wide variety of fruits can be used to make preserves. One need but remember that glass jars live in the pantry, not on the table; that metal spoons are not to be stored in acidic fruit; and that red is photogenic.

Ideally jams are home-made. Those too lazy to achieve this ideal will find a ready supply at any church fête or local produce sale. The ladies behind such endeavours may display more exotic and adventurous tastes in their choice of fruit than the local supermarket.
